They are perfect for cooling off in the sun or as an after dinner treat. Carte D’Or Mango has real chunks of juicy mango pieces, while Carte D’Or Lemon sorbet contains mouth-watering lemon pieces, for added zest.
To celebrate these delicious sorbets, Carte D’Or has created a series of five recipes offering new ways to treat yourself over the summer. From the Light and Fruity Trifle, to a more exotic Mango Lassi there’s something to suit everyone’s taste. On a hot day, why not whip up a Raspberry and Mango slush for a refreshing fruity experience ,or perhaps go for the more traditional Summer Pudding for the whole family to enjoy. And to make any occasion a little more special , the Prosecco with Mango is the perfect mouth-watering fruity cocktail for a summer’s day.
RECIPES
Carte D’Or Light and Fruity Trifle
Servings: 4-6
Preparation time: 20 minutes
Setting time: 2-3 hours
300ml fruity white wine e.g. riesling
55g (2 oz) caster sugar
4 gelatin leaves, softened in cold water for 20 mins
300g summer fruits e.g. sliced strawberries, raspberries, blueberries
100ml reduced fat vanilla custard
4-6 scoops Carte D’Or Lemon sorbet
Mint leaves to decorate
1. Pour the wine into a saucepan and add sugar. Heat, stirring until sugar has dissolved, but do not boil.
2. Remove gelatin from soaking water and add to hot wine. Whisk until dissolved and then cool.
3. Pour a shallow layer of jelly into 1 large or 4 chilled individual dishes and arrange fruit on top. Place in fridge to set. Repeat in layers, allowing the jelly to set.
4. When the jelly has set, spoon over the custard and top with the lemon sorbet. Decorate with mint leaves.

Carte D’Or Mango Lassi
Servings: 2
Preparation time: 10 minutes
Cooking time: n/a
1 ripe mango, peeled and chopped
150ml semi skimmed milk
175ml natural low fat yoghurt
2 scoops Carte D’Or Mango sorbet
1. Place all the ingredients (reserving some mango for decoration) in a blender and blitz until smooth.
2. Pour into glasses and decorate with reserved mango and fresh mint if liked.
Carte D’Or Raspberry and Mango Slush
Servings: 4
Preparation time: 10 minutes
Freezing time: 2-3 hours
170g fresh or frozen raspberries
2 scoops Carte D’Or Mango sorbet
350ml sparkling water
Sugar to taste if needed
Adult version – 2 tablespoons liqueur e.g. peach schnapps, optional
1. Place all ingredients in a blender and blitz until smooth.
2. Pour into dishes or a container and place in freezer until firm but not solid. Stir every hour to even up the freezing process.
3. When ready, stir again and spoon into serving dishes and eat immediately.

Carte D’Or Summer Pudding
Servings: 4-6
Preparation time: 15 minutes
Setting time: overnight
225g (8 oz) red or blackcurrants
350g (12 oz) blackberries
225g (8 oz) raspberries
Zest of 1 lemon
150ml (1/4 pint) water
85-100g (3-4 oz) sugar
Thin slices of white bread, crust removed
4-6 scoops Carte D’Or Lemon Sorbet
1. Place the fruit (reserving some for decoration), water and sugar in a saucepan and simmer until the sugar dissolves.
2. Cut each slice of bread in half lengthways and use to line the sides of a pudding basin, trimming away excess bread around the top edge.
3. Cover the base of the basin with triangles of bread, fill with fruit and cover with additional bread triangles.
4. Place a flat plate on top of the pudding, place weight on top and chill overnight.
5. Carefully turn out, cut into slices and serve with Carte D’Or lemon sorbet. Decorate with reserved fruit which could be frosted if liked.
Prosecco with Carte D’Or Mango Sorbet
Servings: 2
Preparation time: 5 minutes
Bottle of chilled Prosecco
2 scoops of Carte D’Or Mango Sorbet
1. Fill two wide rimmed champagne glasses with Prosecco
2. Place a scoop of Carte D’Or Mango sorbet into each glass
